At home& cooking



Siedze sobie w domu ze zwichnieta noga. Poniewaz rekonwalescencja troche potrwa nie chodze teraz do pracy, mam wiecej czasu np. na obserwowanie swiata zza okna.
I na gotowanie:).

Jedna z pysznosci, ktore lubilam w kuchni mojej Babci byly nadziewane warzywa. Roznego rodzaju i w najrozmaitszych wariacjach. Chyba odziedziczylam to po niej, ze uwielbiam warzywa i lubie eksperymentowac, wypelniac je czym tylko sie da.
Dzis przyszla kolej na baklazan. Poniewaz smakuje on najlepiej, gdy jest gotowany powoli, nie jest to przepis na szybki lunch, ale mimo to serdecznie polecam nadziewanego baklazana. Mala odmiana od codziennego jadlospisu, przynajmniej dla mnie:).

Potrzebujemy: 2 baklazany, 2 pomidory, 1 cebula, 200g pieczarek, starty zolty ser, przyprawy.

Przekrajamy baklazany na pol, wydlubujemy miazsz, polowki posypujemy sola i odstawiamy na ok. 20 min. Po tym czasie zbieramy papierowym recznikiem krople (w ten sposob pozbywamy sie gorzkiego smaku).
Siekamy cebulke i podsmazamy na oliwie z oliwek. Dodajemy pokrojone pieczarki, kilka minut mieszamy, dodajemy pomidory i posiekany miazsz baklazana. Przykrywamy patelnie na kilka minut, az warzywa nieco zmiekna. Przyprawiamy (ja dodalam mieszanke przypraw wloskich, sol i pieprz). Zdejmujemy z palnika, dodajemy 3/4 zoltego sera.
Taką masa nadziewamy polowki baklazana, posypujemy pozostalym serem. Zapiekamy ok. 40 minut w 170°C.

What I used to love about my Grandma's cooking was that she cooked absolutely delicious stuffed vegetables. Lots of them and lots of variations. So I guess I inherited that from her. I love veg and love to experiment with staffing anything that can be possibly staffed.
Today it was turn for aubergines. Now, it is not a quick lunch fix, as aubergines taste best if they are cooked slowly. But nevertheless, why not give it a try, it is something different, at least for me:).

We need: 2 eggplants, 2 tomatoes, 1 onion, 200g of mushrooms, grated cheese, herbs.

Cut the eggplants in half lengthwise, scoop out the flesh , add a little salt on the halves and set aside for about 20 minutes. Then wipe it with kitchen towels (that's the best way to get rid of any bitterness).

Fry the chopped onion on the warmed up olive oil, then add the chopped mushrooms, fry for a few minutes, stir in the tomatoes and the eggplant flesh. Cover it all for a few minutes to let the vegetables soften a bit. Season to taste ( I use mixed Italian herbs, salt and pepper). Then take it off the heat, add 3/4 of the cheese and mix well.
Arrange the courgette halves on the baking tray, and fill in with the mixture, sprinkle with the remainder of the grated cheese and bake for around 40 minutes at 170°C.
